Energy Salad

Ingredients

  • 3 cups mixed greens
  • 1 small cucumber, sliced
  • 1 small red onion, sliced and cut in half
  • 1 medium carrot, shredded
  • 1 medium celery stalk, sliced
  • 1-cup cabbage, shredded
  • 1 tomato, sliced and cut in half
  • 1 avocado, sliced
  • ¼ cup walnuts or almonds

Instructions

  • Wash salad green and vegetables.
  • Spin (dry) leafy greens.
  • In a large bowl place the salad greens and the shredded carrot and cabbage
  • Add 1 or 2 tablespoon of olive oil and mix the salad.
  • Place cucumber, slices of onions, and celery on top of salad.
  • Add the tomato and avocado
  • Sprinkle with the nuts on top of salad
