Energy Salad

Ingredients
- 3 cups mixed greens
- 1 small cucumber, sliced
- 1 small red onion, sliced and cut in half
- 1 medium carrot, shredded
- 1 medium celery stalk, sliced
- 1-cup cabbage, shredded
- 1 tomato, sliced and cut in half
- 1 avocado, sliced
- ¼ cup walnuts or almonds
Instructions
- Wash salad green and vegetables.
- Spin (dry) leafy greens.
- In a large bowl place the salad greens and the shredded carrot and cabbage
- Add 1 or 2 tablespoon of olive oil and mix the salad.
- Place cucumber, slices of onions, and celery on top of salad.
- Add the tomato and avocado
- Sprinkle with the nuts on top of salad
