For those who wish to reduce their intake of eggs due to concerns about cholesterol (185 mg per large egg), allergies to eggs or just because they are vegan, there are many egg replacement substitute. Here are five egg substitution options, which I’ve been using. Though they are egg replacements, keeps in mind that depending on the recipe; the taste will vary according to egg replacement used. Not all options below are good for everything. For example, sweet fruit type egg replacements are better used with desserts while flax seed versions would be better for non-sweet baking.
5 Egg Replacement Options for Baking
1 – Apple sauce
¼ Applesauce per egg substituted.
2 – Banana
Use half a banana, per egg replaced, and mash well. Since bananas are sweet, they are better used for desserts.
3 – Flax meal
One tablespoon of flax meal and 3 tablespoons of water. Mix and let sit for five minutes. The oils will seep out and form a gelatin consistency. Flax seeds are hight in fiber and omega 3.
4 – Tofu
Mash ¼ cup tofu per egg
5 – EnerG Egg Replacer
EnerG Egg Replacer is a commercial substitute, which is easy to use.
1-½ teaspoons EnerG Egg Replacer and 2 tablespoons warm water and mix.
