This is an easy salad to make and a crowd pleaser. The recipe is from Betsy Bragg’s book: Real Kids Real Food Kids-Tested recipes available on Amazon.

Kale Avocado Salad

Yield: 8 small servings

Recipe by Betsy Bragg


  • Vegetable peeler
  • Cutting knife
  • A fork
  • Cutting board
  • Measuring spoons
  • Mixing bowl
  • Disposable gloves


  • 1 head of kale any variety, shredded by hand
  • 3 carrots, shredded
  • 2 – 3 avocados, pitted and chopped
  • 1 ½ tablespoons lemon juice
  • 1-teaspoon sea salt


  1. In a mixing bowl, combine all ingredients.
  2. With a fork mash the avocado to a creamy consistency
  3. Mix well with your hands the kale and cream the avocado (this should only take a few minutes).
  4. Serve immediately.

    I am not a Kale fan, although I know of its health benefits. Seems like it would work with any salad green. Definitely will give one a try. May throw in some slivered almonds. Tx for sharing…
