Majarete is a coconut rice porridge similar to a coconut flan. It is believed that the “majarete” originated in Spain. In the Dominican Republic, Puerto Rico and Venezuela the majarete is a dessert, though my mother also made it for breakfast. Cooks in countries such as the Dominican Republic and Latin America use corn meal for their majarete. Venezuelans use wheat and Puerto Ricans use rice flour. My mother’s majarete, similar to a tembleque, which is lighter. She used rice flour instead of corn meal. I use brown rice flour to make it more nutritious.



  • 3 cups (14 oz. — 414 ml) coconut milk
  • 3 cinnamon sticks
  • 3 cloves
  • 1 cup rice flour (brown optional)
  • ½ cup natural organic sugar (more or less to taste)
  • A pinch sea salt
  • 2 rings of rind orange or just the zest of a small piece of orange (optional)
  • Cinnamon to taste (sprinkles on top of dish when served)

In a saucepan mix the coconut milk with cinnamon sticks and cloves. Cook over medium heat. After 2 minutes, reduce heat. But always stirring constantly with a large spoon or a “whisk”. Simmer 4 minutes. Then gradually add the dry ingredients mixing with a whisk, or fork, constantly so it does not get lumpy. Once the meal is cooked, reduce heat and simmer, continuously, stirring so it will not get lumpy. You can remove the cinnamon sticks and cloves. I always leave the cinnamon stick in my dish. I love to suction what’s left inside the cinnamon stick. It’s so tasty.

Pour into the “bowl” of your choice. May eat hot or let cool and refrigerate.

      Thank you for your comment! I’ve heard that some people do use wheat or whatever flour they have on hand when they don’t have rice or corn flour. I do have a preference for the traditional recipes. You are welcome to contribute. Regards!

    Your website is really nice, I really like some of the recipes. I hope you are getting settled in and all is going perfect.
    The recipe for Majarete sounds really good, I may try it soon. Also, that big healthy chocolate chip cookie will be a must in this household with Dan. I look forward to trying that also. Thanks for some new and interesting recipes.
