Most times my refrigerator is full of greens and other produce, but not today.
Not much today, though still very green.
For those who have asked what I eat, though I follow a gluten-free vegan diet I have tons of variety of foods to eat. Most prepared from scratch. Some people think that because I’ve ruled out wheat, barley, rye, dairy and their products and all baked goods (even those gluten-free breads too!) that I’m limited to what I can eat. That is far from reality. By following this diet it has open the doors to the opportunity to try many foods I would normally not have eaten. For decades I’ve had in my diet grains such as amaranth, millet, quinoa, rice, teff and legumes such as adzuki, black eye peas, and mung beans. I eat all sorts of fruits, though I limit fruits now to a few times a week, I’ve replaced them with green vegetables and green juices. I found that eating too much fruits was my replacement for sweets. Now if I want a smoothie, I’ll have it, but not on a daily basis. Instead, on a daily basis we have a green juice (not a green smoothie). It has been great for me since it has normalized my sugar cravings.
Yes, those are cookies! Gluten-free cookies. They are not mine, though I love cookies! I don’t miss them even when the temptation is there. I’m not the only one at home, so sweets are around me, and yes, once in a while, especially when I have company, I might eat more than just a few, but those are rare occasions and they are gluten-free and dairy free.
